Gettin to Steppin with Food Preppin!

We have all been through the process of an overindulgent weekend of eats and drinks thinking “ok, getting back on track Monday…for realsy this time!” Then Monday comes and there is half price happy hour with those mini crab cake sandwhiches and spinach artichoke dip that you love and out goes any thoughts prior to hearing cakes and dip.  Well, I am a firm believer in the “treat yo self” method of life to enjoy yourself, but always keep that balance in mind.  That is why I would like to introduce to you…que long awkward drum roll that I literally say all the time...Ziploc plastic containers! Now I am sure you are sitting there like…”Umm, yeah hey…soooooo plastic containers have been around since literally the dinosour era….sooooo yeah nothing new here sister.”  The reason why I am bringing them up is because they are the perfect meal prep accessories for your weeks where you want to get back on track!  Now, usually these containers hold that leftover chili or lasagna that then sits in the back of the fridge for a decade and it appears as if a tiny chia pet has grown around it.  In this case we are putting these containers to good use!

On a Sunday night after my usual Whole Foods run I was pretty much on hangry level of life without even thinking of what I was going to eat that evening or even the week.  What I did grab was an array of bell peppers, mushrooms, and onion.  Along with randomn things such as a two bananas (whole only gets two?), celery, and a rice packet…yes hangry status was messing with my mental state for sure.  By the time I got home I was so tired that I didn’t even have the motivation to make anything to be honest.  Then the little Betty White voice in the back of my head started saying “Now Catherine, it is not a good thing when the Jimmy John’s delivery man knows you by first name…get to cooking!” So I met my Betty White inner voice half way and decided to chop up the peppers, onion, mushrooms, and toss them in the plastic containers.

They ended up keeping perfect in the fridge and the next day all I did was throw them on a cooking sheet with a little tin foil, preheated the oven to 375, and added some olive oil, salt & pepper, and garlic salt!

After in the oven for about 20 minutes the veggies were perfect to put on Seeds of Change Quinoa and Brown Rice or on top of flour tortillas for fajitas.  This made a perfect meal for the week and I was able to keep leftovers to chop up for an omlette on the weekend!  See we all can have the best of both worlds with those happy hour treats and meal prepping for the week! Don’t forget to listen to that inner Betty White voice, buy yourself some tiny containers, and get to preppin!
